Food For Soul - Sweet and Sour Vegetable Chicken with Egg Fried Rice

Hello everybody !
I'm back with another exciting food post, as i'm going a little under the weather due to change of climate situation in UAE , I thought why not share my favorite recipe with you all that i made few days ago so i made sweet and sour chicken gravy with vegetables and egg fried rice it's tasty and at the same time it's healthy as it has less oil and more fibre and vitamins ( Vegetables ) and Proteins ( Chicken ). So let's begin with the ingredients now.

Note : The quantity of gravy and rice is according to 5-6 servings in the following recipe. You can change the quantity depending for how many person you are making.
Ingredients for Sweet & Sour Gravy :
Boneless Chicken Breast - 2 Pieces cut in small cubes
Onion - 1 Medium cut into dices
Carrot - 1 Diced
Mushrooms - 6 Sliced
Capsicum - 1 Diced
Sweet Corns - Small size tin pack
Ketchup- 1/2 Cup
Chicken Stock - 1 1/2 cups
Sugar - 1 Tsp
Black Pepper - 2 Tsp
Salt - As per required
Vinegar - 2 Tbsp
Soy Sauce - 2 Tbsp
Pineapple - 4 Slices ( I took a tin pack )
Pineapple Syrup - 3 Tbsp
Cooking oil - 3 Tbsp
Ginger Garlic Paste - 2Tbsp
Cornflour - 4 Tbsp
Preparation time : 30 minutes.
Procedure :
1. First heat up a pan, add cooking oil and add ginger garlic paste fry it for 1 minute and add boneless chicken into it fry the chicken on medium heat until its soft and tender.


2. Now add Vinegar, soy sauce, black pepper and salt into the mixture.

3. Once the chicken is done add carrot, corns and mushrooms to the wok and stir fry them with chicken. Cover it for 2 minutes. Also add the ketchup.


4. Add onions and capsicum later otherwise they will become really soft and we want them to be crispy. Now also add chicken stock, sugar and cover the wok with lid for 5 minutes so that the gravy can simmer.

6. Now check vegetables if they are done. Add the pineapples and pineapple syrup and adjust the taste according to your taste buds ( salt , chilli flakes etc) as the pineapple syrup is sweet. Now mix cornflour in half cup water keep in mind there should be no lumps in cornflour mixture than add to your boiling gravy cook for 2 minutes on high flame until you find it thickened according to your desire.
So your gravy is ready you can switch off the flame now.

In the end your gravy will look like this. Shiny and Mouth watering :D

Ingredients for Egg Fried Rice :
Boiled Rice - 3 Cups
Garlic - 2 cloves finely crushed
Omelette - 2 eggs ( make it separately by just adding little salt and pepper afterwards cut into small cubes before adding to the rice )
Green Onion - 5 finely chopped or as much as you like
Carrot - 1 finely chopped
Soy Sauce - 3 Tbsp
Vinegar - 3 Tbsp
Black Pepper - 2 Tbsp
Salt - As per required
Cooking oil - 4 Tbsp
You can always adjust the ingredient according to your taste so no need to be accurate with the proportions because this is not baking in which you need to follow the exact recipe.
Preparation time : 15 minutes.
Procedure :
1. In a deep pan heat cooking oil. Add garlic stir fry it for one minutes.
2. Now add carrot fry it for another minute and add green onions as soon as you can smell the most mesmerizing aroma of these onions that is within 30 seconds add the boiled rice.

3. Now add your seasoning salt , pepper , vinegar and soy sauce. Mix it well.
4. Add the omelette you made separately.
5. Adjust the flavor accordingly and voila your egg fried rice are ready !! :P

Now time for the final serving look.
